For the last year, I have been using the plastic pour-over cone to brew my daily cup, and I recently decided that I need a change. After researching numerous options including the Bonmac and the Bee House, I decided to go with the Hario V60. Even after deciding on the V60, I still had another decision to make: plastic, glass, or metallic? The plastic was affordable but the copper one was sexy. In the end, I decided to go with the glass one because it was similar to the Chemex (which has been a long time standard).
The V60 is frequently described as unforgiving because the speed is all up to the volume and size of your grind. The most obvious difference between the V60 and other drip cones is the size of the hole. Others limit the rate of water exiting, forcing your water to slowly get through your grinds. However, I did not find it to be very difficult switching from the Melitta. It is true that you need a little adjusting to find the right grind, but I just had to make the grind a little bit finer to compensate for the gaping hole on the V60. I also had to increase the volume of the grinds to get closer to a 3 minute extraction.
Overall, the V60 is a fun change but I will have to use it more to nail down the correct extraction strategy.
